B is for BEEF: Its what's for dinner


I have to brag on my husband a little bit. He cooked dinner tonight. Not like a meal in a box, but a real meal that consists of chopping and slow cooking. Those of you who know us know that I do the cooking and he does the cleaning. The past extent of his cooking experience has been pop tarts and scrambled eggs (he does make a mean scrambled egg though). So recently I have been craving a pot roast with carrots and potatoes. Don't ask. Such a dude thing to crave, I know. Maybe I am iron deficient. 

Anyway, he had the day off today so I asked if he would stop by the store and get the stuff to make it. Everything went off without a hitch until he was getting the groceries out of his car and the onion went rolling down the storm drain. Poor thing ended up having to go back to the store. But when I got home, it smelled like Grandma's kitchen. It was mmmm good. Maybe this is just the beginning of Chef J Knight, pot roast extraordinare.

ABC game


Ok, so I've seen alot of people playing the ABC game in their blogs. I think I will try, but I might not make it too far so don't expect much. Anywhoo, here goes:

A is for Almost Anniversary!

We will officially be celebrating our 2 year anniversary on Tuesday (April 29). My how time flies. Seems like just yesterday he was trying to pick me up, and with a little help from Anzie, he succeeded. Its funny how much things can change in one year, much less two! Soon after we got married, we headed for the Sunshine State and haven't looked back. I have to say that these past two years have been the best two of my life. We have met some amazing people here who I cannot imagine not having in our life, but at the same time we dearly miss our friends and family back home. I absolutely love married life. I mean, we are pretty grandpa-ish at times, but thats ok. I am married to my best friend and I never imagined I would be as blessed as I am. This past year has been an exciting one full of change and I can't wait to see what the next one holds!

Happy Birthday Mom!!




Today is a good day. Not only is today my momma's birfday, but she is coming to see me!!!
Here are a few reasons why I love my mom:

1. She is insanely funny. Not just your normal funny. She is "make up a crazy name for you the first time she meets you" funny. Once you meet her, you will not forget her.
2. I could paint a turd on a a canvas and she would love it and hang it on her wall.
3. She doesn't care what I do as long as I am safe and happy
4. She is an amazing teacher and gives children with horrible situations something to believe in.
5. She used to stash chocolate in the house, but I knew where it was :)
6. She loves my hubby (but then again, who doesn't?)
7. She always makes sure I know how proud of me she is
8. She would rather have a "homeade" gift than a bought one.
9. She was never a "helicopter" parent
10. Most of my friends always thought she was cooler than me
